Apple Sweet Potatoes with Streusel Topping

I love sweet potatoes. Especially this recipe. This is a staple at Thanksgiving and fall meals. It's almost like a dessert. This time I cooked some fresh cranberries and added that to it too.

Apple Sweet potatoes with Streusel topping

Peel and cook 6 yams or sweet potatoes. Drain and mash. While Still warm add:
1/2c. butter,
1/3c. apple cider,
1/4c. sugar
1t. vanilla
mix well
2 mcintosh apples peeled, cored and thinly sliced.
layer apples with mashed sweet potatoes
at this point you can add cooked cranberries or dried layered in their also. I cooked 1c. of cranberries in 1/2c. apple cider til they popped and were soft. I also added in 1/4c. dried cranberries.
1/2c. flour
1/2c. butter
3/4c. brown sugar
1c. chopped pecans
1/2t. cinnamon
mix until crumbly
Sprinkle on top of sweet potatoes
Bake 350 for 30 minutes.
