Gooey Chocolate cakes with Raspberry Sauce

I absolutely love these cakes. What's not to love? Chocolate oozing out from the inside and raspberry sauce to mix in with that. Yum!
So easy too.
Gooey Chocolate Cakes
Preheat oven  to 400. Butter and flour 6 ramekins or 6 muffin cups
1/3c. flour
3T. cocoa
1/4t. salt
mix dry ingredients together
melt in a double boiler
1 stick of butter cut up into pieces
4 oz of semi sweet chocolate
cook until just melted and smooth then set aside
 Whisk together
2 eggs and 1 egg yolk
then add
6T. sugar mix for 2 minutes with a whisk. Add dry ingredients in carefully with whisk then little by little stir in chocolate butter mixture.
Divide among cups.
Bake 13 minutes. Let cool on wire rack 3 minutes then run knife around and invert and serve.

Fall Pom/Apple Salad with Goat cheese balls and Apple Cider Dressing


This is super Yummy! I love Goat Cheese and nuts, and fruit together. I based  this idea loosely from Paradise Bakery's Fuji apple salad.

1 Head Romaine lettuce cut up
1 bag of spring mix lettuce
1/4 of red onion chopped
2 tomatoes chopped
1/2c. pomegranate seeds
1c. pecans divided toasted and chopped use 1/2c. for salad and chop other half finer and roll goat cheese balls in it. (I glazed the pecans another time when I made this. Delish!)
2 pouches of Mrs. Mays freeze dried apple slices
5 oz. goat cheese.
roll goat cheese into bite size balls and roll in chopped pecans. I put a couple of pomegranate seeds in middle of balls too for an added burst of flavor. Refrigerate until ready to serve.

Apple Cider Dressing
1/2c. apple cider
2t. parsley flakes
3T. cider vinegar
1T. Dijon mustard
1/4t. salt
1/8t. pepper
1/4c. olive oil
1 clove garlic minced
2T. agave nectar
1t. basil
5 slices dried apple crushed to powder
3T. sour cream
2 drops of apple flavoring (optional)
mix well.

Apple Sweet Potatoes with Streusel Topping



I love sweet potatoes. Especially this recipe. This is a staple at Thanksgiving and fall meals. It's almost like a dessert. This time I cooked some fresh cranberries and added that to it too.

Apple Sweet potatoes with Streusel topping

Peel and cook 6 yams or sweet potatoes. Drain and mash. While Still warm add:
1/2c. butter,
1/3c. apple cider,
1/4c. sugar
1t. vanilla
mix well
2 mcintosh apples peeled, cored and thinly sliced.
layer apples with mashed sweet potatoes
at this point you can add cooked cranberries or dried layered in their also. I cooked 1c. of cranberries in 1/2c. apple cider til they popped and were soft. I also added in 1/4c. dried cranberries.
Streusel
1/2c. flour
1/2c. butter
3/4c. brown sugar
1c. chopped pecans
1/2t. cinnamon
mix until crumbly
Sprinkle on top of sweet potatoes
Bake 350 for 30 minutes.
