St. Patrick Day Desserts


Bailey's White Chocolate, Caramel, Toffee Rice Pudding



I Really like Rice Pudding it's such a comfort food. This is putting it over the top though but it is delicious. My mom use to make a Danish Rice that was Whip Cream folded into Rice then a Strawberry topping kind of like a pie filling was Put over the top it was really good. This is somewhat similar. The Pictures look odd but it is hard taking pictures of brown, tan and white food. 

This is what I did for the recipe

1 pkg of sugar free White Chocolate pudding mix with 1/4c. Baileys, 1/2-3/4c milk, and 1/2c. caramel sauce. Mix with a whisk until mixed well then fold in 1 c. Whipped Cream and then 11/2c. chilled cooked rice. Mix well then fold in 3/4c. toffee bits. 
This was really good especially if you are a Rice Pudding fan.

Here's a treat for the kids 

Lucky Charm Sugar Cookie Pizza with Marshmallow Frosting, Lucky Charms, Fruity Funmallows and little pieces of Rice Krispy treats. All things Marshmallow that I love!!
 


I would of Put some Pop Rocks on for fun too but I had none. This was really good and the kids loved it. So did I.

Lucky Charm Sugar Cookie Pizza

1 batch of sugar cookie dough or a bought roll. Spread out onto medium greased pizza pan and bake according to recipe. ( I used Betty Crocker recipe because it makes the perfect sized batch for this)
When cool Frost with Marshmallow Frosting
1/4c. softened Butter
 1 tub of Marshmallow Creme
sprinkle of salt
Beat until fluffy then add 3c. Pwd sugar and 1T. spoon of milk if too thick. 
1t. vanilla
beat until smooth then frost cookie Pizza
Top with Mainly the Lucky Charms Marshmallows about 1/2c. and 2T. of the cereal part. Then sprinkle 1C. of marshmallows and if you want the little pieces of Rice krispy treats. I had some that we made yesterday with peeps so I threw them on. I also sprinkled on a little malted milk pieces that I had on hand. I wanted to put on crushed strawberry malted milk balls but I can't find them anywhere anymore.

I also made some Lucky Charm Ice Cream which I need to put on here soon. I make so many Ice creams and I want to put them on here so I can remember what I did because they are all soooo good.

Strawberry Pop Tart Rice Krispy Treats





I like making Rice Krispy Treats a lot and adding different thing to them.  My kids like it too.

This time I saw pop tarts at the store and thought of adding them with a strawberry filling in the middle like pop tarts have and then these were born.

Rice Krispy Treats Recipe using Strawberry Marshmallows

1/4c. butter
1 bag of Strawberry marshmallows

Melt in a large pan over medium hi heat until mallows are melted and incorporated with butter
stir in 5 C. rice krispys
and 3 pop tarts or more coarsely chopped
Press half into a greased 9x13 pan.

I pureed 15 Strawberries with 1/4c. sugar and 3T. ultra gel. I let it thicken a little  by sitting there and then spread it onto the treats. Then put remaining hlaf or rice krispy mixture over and top and smooth out with your hands as best as you can pressing to seal them together.

Frost with strawberry icing
  • 3T. butter, softened
  • 1/2 of (8-ounce) package cream cheese, softened
  • 1/8c to 1/4c. strawberries pureed that was about 8 strawberries
  • 4 cups powdered sugar
Beat cream cheese and butter together until creamy and smooth. Add powdered sugar , beat and add strawberry puree a little at a time until you get a nice spreading consistency but not too runny.

Strawberry Oreo Brownies with Strawberry Marshmallows and Strawberry Icing





I wanted to try the Strawberry Ice Cream Oreos and make them into some sort of dessert. So instead of doing Rice Krispy Treats I did them with brownies and they were sooooo good.


Here's the recipe

Brownies

  • 1 cup  butter
  • 2 cup sugar
  • 4 eggs
  • 2 teaspoon vanilla
  • 2/3 cup unsweetened cocoa powder
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 rows of Strawberry Oreos coarsely chopped

  • 12 large strawberry Marshmallows sliced in half

Preheat oven to 350 degrees. Grease and flour and 9 x 13 inch  baking dish.
In a medium saucepan, melt the butter. Once melted, remove from heat and whisk in the sugar until combined.
Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla.
Whisk in the dry ingredients until combined and fold in Oreos. Pour the batter into the prepared pan.
Bake for 30 minutes, or until a toothpick inserted in the middle comes out with a few crumbs clinging to it then top with halved marshamallows and bake 3 to 5 minutes more or until puffed. Allow brownies to cool completely before frosting.
Strawberry Icing (tastes liek melted strawberry Ice Cream) (Perfect to go with Oreos)
  • 3T. butter, softened

Greek Party

We had a Greek food inspired theme party. It was a lot of fun and turned out great! The only thing that didn't was the pictures. We forgot to take pictures until it was basically over. I'm so mad. I took a couple before it was all set up but then forgot. My husband took some after but it was dark and a lot turned out blurry. I'll go ahead and post even though they didn't turn out so you can at least get the general idea.

We told our guests to dress up in Greek fashion: togas, goddess, gods or slaves. some did some didn't what we figured. It was fun either way to see what people came up with.

I decorated with white, blue, Gold and green ivy. We had pillars and urns to decorate as well as white candles and mirrors. I made labels for the food using a Greek map. I saw someone else had done something similar on the web so I made something like it as well. I bought a lighted Grapes garland and set that along the gold and white with the mirrors on the island around the food. These are the pics that came out blurry. Ugh! We had Gold plates and clear silverware to make easier clean up.





We had Pillars as you walked in through the entry way with blue netting and white Gossamer intertwined and draped over archway.

I made an extensive menu of Greek/Mediterranean food. It all turned out delish!

Cauliflower Pizza Crust with Roasted Eggplant and Fresh Mozzarella

Another Meal Using your Cauliflower Rice – Cauliflower Pizza Crust POSTED ON APRIL 24, 2012 BY SHAUNA This was so good! I’m totally hooked. Healthy too! You can put whatever toppings you like on it. I put roasted eggplant, oven dried tomatoes, green onions and fresh mozarella with a little balsamic vinegar drizzled over after baking. I almost ate the whole dang pizza myself. It was that good and almost guilt free. Cauliflower Pizza Crust with Eggplant, fresh Mozzarella, and Oven Dried Tomatoes Preheat oven to 400 1 batch of cauliflower rice (Big tip: put “rice” in a thin cloth and squeeze out all the excess water) This helps so crust isn’t soggy. 1 egg 1/3c. goat cheese 1t. oregano dried 1/4 t. salt Mix altogether until well combined and spread out on a parchment lined baking pan. Press the dough into a crust about 1/3″ thick making edges a little thicker. Bake for 35-40 minutes until golden brown around edges and spots through out rest. Put on the toppings. Fresh Mozzarella cheese 2 green onions sliced Half an eggplant diced 1 inch cubes and sprnkled lightly with salt Mix 2T. olive oil, 1 T. cider vinegar, 1T, agave nectar, 2 Garlic cloves chopped, 1/4. t. cumin, 1/2 t. smoked paprika, and a sqeeze of lemon juice Pour mixture over eggplant and roast at 400 for 20 – 30 minutes or until tender. Oven dried roasted tomoatoes balsamic vinegar I put on a thin layer of tomato pizza sauce then I layered slices of mozzarella cheese, the roasted eggplant, the green onions, the oven dried tomatoes and then put back in the oven for 10 minutes or until cheese is melted. Cauliflower Rice


Here's a healthy alternative to rice which I think tastes great.

Cut the cauliflower from the head and cut it into smaller pieces.  Wash and dry the pieces and then put them into the blender/food processor and mix it till it is the size of rice.  Add Cauliflower into microwave safe dish with the lid (nothing else, don’t add water) and microwave for 5 minutes or put in pan on stove with an inch or 2 of water bring to a boil and throw in cauliflower with lid and steam 3 to 5 minutes then strain.  When it is done add what ever seasoning  you would like!

Asian Quinoa Salad



Here’s another great and healthy Quinoa Salad. I used a combination of white and red Quinoa.


Asian Quinoa Salad
3/4c. uncooked Quinoa
11/2c. water or Chicken Broth
1c. Sugar Snap Peas or Snow Peas trimmed and cut in half
Bring to a boil then lower to med low and cook 10 minutes. Then toss in Snow Peas and cook for 6 minutes more.
Remove from heat and add remaining ingredients.
2-3 C. shredded Coleslaw mix or (shredded cabbage and carrots)
1 Red Bell Pepper sliced thin
3T. Cilantro Chopped
2T. Green onions sliced
1T. Sesame Seeds
Dressing
1T. Rice Wine Vinegar
2T. Orange Marmalade
2t. Sesame Oil
1T. Ginger root minced
Juice from 1 lime
1t. salt
pinch of Cayenne pepper
1t. garlic minced
Mix altogether until combined well. Pour over Quinoa and toss.
